Is Jell-O salad gross? I've seen Jell-O salads with vegetables, fruits, and other unidentifiable objects, so generally I am not a fan. But this Jell-O salad I could eat all day! The pecans are essential. We serve it at Thanksgiving and if you like it, you like it. And if you don't, you definitely, don't!
Pour 1 cup boiling water over 1 6-oz package of lime flavored Jell-O. Still until dissolved. Add 1/2 cup pineapple juice (drained from a 20-oz can of crushed pineapple).
Place it in the fridge to partially gel (partial is the key here!).
Cook the crushed pineapple in a small saucepan until it boils, and cook it for 5 minutes. Cool to room temperature.
When the Jell-O is partially gelled, blend 8-oz softened cream cheese into it until it is creamy. Mix in the cooled, cooked pineapple.
Whip 2 cups of heavy cream until fluffy. Fold it into the Jell-O cream cheese mixture. Fold 1 cup of chopped pecans into the Jell-O mixture. Place in a pretty bowl and put it in the fridge till it has completely gelled.
