We <3 granola! But what we love most is homemade granola where we can control the add-ins and amounts of sweetener. We eat ours by the handful as a snack or in a bowl with milk as a cereal. We even make our own granola bars with this recipe. Don't forget to adjust the ingredients after you make it once. Maybe you like less honey, or maybe you like sweetened flaked coconut, etc.
Let's get right to it!
Preheat oven to 300.
In a really large bowl, combine 12 cups of oats, 1 cup unsweetened shredded coconut, 1 cup whole wheat flour (or sub any flour for gluten free), 1 teaspoon of salt, and 1/2 cup powdered milk.
In a microwave safe bowl add 1 cup of olive oil, 1 + 1/3 cup honey, and 1 tablespoon vanilla extract, then microwave 1 minute and stir.
Pour the olive oil mixture over the oats mixture and stir to combine evenly.
Spread the granola over two cookie sheets and bake for 50 minutes to an hour, mixing the granola around every 15 minutes.
Cool completely, add add-ins, then store in an airtight container.

Nuts (walnuts, pecans, almonds, anything!)
Dried cranberries or raisins
Seeds (pumpkin, sunflower...)
Chia seeds
Hemp
Flax
...the possibilities are endless!
