Since our hometown team is going to the Superbowl I figured I’d better start thinking about what to whip up in the way of football snacks. Here’s a fairly easy recipe I tested out with The Excellent Husband two weeks ago that got lots of rave reviews.
Here’s how to do it
Spray regular muffin tins well with non-stick cooking spray. Place one wonton wrapper in bottom. Spread a bit of refried beans on bottom of wrapper,then top with cooked taco meat followed by a few black beans and some shredded cheddar cheese. Add another wonton wrapper and repeat this layer.
Bake at 350 degrees for 15-20 minutes till wrappers have crisped and cheese has browned. Remove & top with your favorite taco toppings such as shredded lettuce,homemade salsa,cilantro,red onions,and sour cream.
Of course the possibilities are endless for both the toppings and the fillings. Don’t like beans? Skip ‘em. Have leftover shredded pork? Use that. Try Monterey Jack or top with jalapenos. Smokey adobo chiles would be amazing. Any way you make them,they’re sure to be a hit!
